The specific application of sodium carboxymethyl cellulose (CMC) in the food industry (Add amount)

2021-11-06

The food additives and ingredients research group believes that edible sodium carboxymethyl cellulose (CMC) has multiple functions such as thickening, emulsification, shaping, puffing and preservation, and can be used instead of gelatin, agar, sodium alginate and other food glues. Adding edible CMC can reduce the cost of food production, improve the food grade, improve the taste, and extend the shelf life. It is a food additive often used by food research and development personnel. CMC is now widely used in various solid foods, liquid beverages, lactic acid beverages, canned food, candy, pastries, meat products, biscuits, instant noodles, rolled noodles, instant food, quick-frozen flavored snacks and soy milk, yogurt, peanut milk, fruit tea , Fruit juice and other foods.

1. Liquid beverages

Sodium carboxymethyl cellulose (CMC) is used in liquid beverages, which can make it suspend evenly and plumply in the melter, with bright and eye-catching color, and can extend the shelf life. The usage amount is about 3~4‰ of the total amount of solids and aqueous solution.

2. Milk yogurt, acidic beverages

Acid-resistant carboxymethyl cellulose (CMC) can play a stabilizing effect, and has the characteristics of preventing precipitation and stratification, improving taste, improving quality, and high temperature resistance. It has good stability and is not easy to produce precipitation; it can extend the shelf time of the product; it has strong acid resistance, and the pH value is within the range of 2 to 4, which can improve the taste of the beverage and make the entrance smooth. The usage is about 4~5‰.

3. Soy milk

sodium carboxymethyl cellulose (CMC) is used in soy milk, which can play a role in suspension, emulsification and stability. It prevents fat from floating and sinking, and has good effects on soy milk whitening, sweetening, and deodorization. The usage amount is added according to the proportion of 5‰ of the total amount.

4. Ice cream

Sodium carboxymethyl cellulose (CMC) is used in ice cream to make good forming performance and not easy to break; it maintains ice crystals and has a slippery touch on the tongue; it has good gloss and beautiful appearance, with less ice crystals, resistance to melting, fine and lubricious taste, whitening color, and original volume increase. To achieve the effect of improving quality and increasing benefits. The usage amount is added according to the proportion of 5‰ of the total amount.

5. Bread and pasta

Sodium carboxymethyl cellulose (CMC) is used in the production of bread, which can make the bread honeycomb uniform, increase the volume, reduce slag, and not collapse. It also has the function of heat preservation and preservation. CMC is used in the production of instant noodles and rolled noodles, which can enhance the toughness of the noodles, maintain the length, resist boiling, and make the taste smooth and smooth. At the same time, when mixing and calendering, it has strong viscosity and water retention, and contains water, and is easy to stir; steam heating produces a film protective layer, the surface is smooth and shiny, easy to process; the oil consumption of frying is low; it can improve the strength of the surface , It is not easy to be broken in the packaging and transportation; the taste is good, and the boiling blisters are not sticky. In addition, it can be used to produce instant noodles to save medicinal oil, reduce costs and increase benefits. The usage amount is added according to the proportion of 5‰ of the total amount.

6. Other promising aspects of CMC

CMC can also be used in the production of alcoholic beverages, which can make the taste of the wines rounder, more perfect in aging, and the taste is more mellow, rich, and the aftertaste is longer; it has stable characteristics, so it can be used as a foam stabilizer for beer. Adding CMC to beer can make the foam plump, lasting and improve the taste. CMC can also be used to preserve freshness of fruits, vegetables, tea, etc. Use 2 to 3% CMC solution containing p-carboxybenzoate to coat and dry fruits, vegetables, eggs, etc., to maintain flavor, prevent mold, and have a fresh-keeping effect;

In addition, sodium carboxymethyl cellulose (CMC) also has the function of improving the physical properties of food. For example, it can be added to jam, butter and other foods to improve spreadability; it can also be used as a solid agent for powdered fats and spices. The Food Additives and Ingredients Research Group of East China University of Science and Technology believes that edible CMC can also be used in the production of juices, fruit milk beverages, soy sauce, jellies, jams and other foods. Appropriate CMC edible products can be selected according to the nature of the product.
